I’ve been wanting to try these out for a while now although aubergines have been killer spenncy and they kinda seem like a dinner party nibble more than a full meal for one (but I could probably eat about 20 of these in one sitting). And boy did they turn out well, exceeding expectations without the guilt. Not quite the same as a traditional mini pizza but they were on point plus the roasted aubergine on the base added a great flavour!
These were minimal effort for maximum deliciousness and could totally spice them up by getting creative with the toppings (although I wouldn’t go too overboard…they’re pretty small) I took these along last night to the most recent #HerneBaes dinner party/farewell party to our good friend Kate who’s off to galavant in Switzerland for the next wee while. Given that we all seem to have a pretty big obsession/addiction to anything aubergine they went down an absolute treat.
2-3 aubergine, cut into 1cm thick slices
1/4-1/2 cup tomato pizza sauce*
10 sliced cherry tomatoes
1/2 red onion sliced
1 cup cheese
salt and pepper
1. Slice the aubergine and sprinkle with salt and pepper and lay out on a oven tray (or two)
2. Preheat oven to 180C and cook for 15 minutes.
3. Remove aubergine from oven and flip the slices, top each slice with a tablespoon of pizza sauce, and cheese. Return to oven and bake for another 10 minutes or until cheese is fully melted.
4. Serve up with some fresh basil and enjoy!
*Was a wee bit lazy this afternoon and used one of those store brought ones
